I've been making them a lot recently.

Tonight we have:

1.5 c flour in a bowl
2 eggs in a 1.5 c measuring cup. Fill that with milk.
Dash of ginger
Two dashes of nutmeg
Dash of salt

2qt salted water in a 3qt pot
spatzle grater
straining scoop

Cook in three batches.

I mixed a portion with small-chopped fried bacon and caramelized onions, plus a diced raw roma tomato.

Tomorrow I will butter-fry some with a chopped apple and add cinnamon to the pan over the noodles.
